Mango Raspberry Frozen Yogurt! I’m on a roll this summer you guys. I have never tried so many fun recipes for summer before. Kind of rolled with whatever was available. But this year I’m actually proud of myself for actively making an effort to try out new recipes and also find some healthy one’s there to share with ya! Here is another delicious recipe to beat that summer heat. It’s a healthy froyo recipe so you wont even feel guilty even if you have a little extra. It’s one of my favorites and was a major hit when I made it at home too. There are few tips in there too, to help you to get that perfect smooth consistency without having too many ice flakes.
INGREDIENTS:
2 cups non-fat greek yogurt ( I’m using Greek Gods Yogurt brand )
1/2 cup mango pulp (with chunks)
1/4 cup frozen raspberries (and a few for garnish)
4 tbsp agave
2 tbsp heavy cream
HOW TO:
Blend the yogurt, cream and agave together until smooth. Separately churn the berries (roughly). Fold in the berries and mango pulp into the yogurt and pour it in a container from which you will be able to easily scoop it out. The mixture will take about 4 hours to set completely.
TIPS:
Strain the yogurt through a cheese cloth and remove all the excess water. For best results keep it tied overnight with a bowl below to collect the water. This will ensure that you get a smooth texture without any ice flakes. Also, the more sweetness (sugar/agave) you add the smoother the froyo will turnout. Also I wanted a kind of marbled look so I did not beat the fruit and yogurt together however if you do not mind a colored dish you can blend everything together. This will give you a more smoother and finer texture.
