Asparagus Egg Fried Rice

Asparagus-Egg-Fried-Rice-10I have been trying to eat healthy for some time now, however tend to go off the track on vacations and sometime on weekends too. But I guess it’s okay to have a donut or a slice of pizza once in a while, right? But these days if you go to the super market, the produce is so fresh and colorful that I go overboard and have to stop myself from buying too much. If you are lucky you may even have a farmer’s market close to your house. One of my favorites veggie is Asparagus! grilled, sautéed, blanched .. I love it in any form. Today’s asparagus egg fried rice recipe is a healthy one with brown rice and a secret ingredient you can use for any kind of fried rice recipes you make in future ! so follow along.

Asparagus-Egg-Fried-Rice-1 Asparagus-Egg-Fried-Rice-2 Asparagus-Egg-Fried-Rice-3Ingredients ( serves 3-4):
1 bunch of asparagus
1 to 1.5 cups of brown rice
1 large egg or 2 small ones
2 tbsp of chopped coriander
2 Tbsp olive oil
1 Tbsp crushed red pepper flakes
2 medium-sized tomatoes
salt & paper to taste
And now for the secret . Add about 3-4 tbsp of milk!
Procedure:
Cut the asparagus in small round pieces as shown in the pic. In a non-stick saucepan heat the oil and saute the asparagus with a little bit of salt and pepper until almost cooked. Remove from the pan and set aside. Now add the eggs and scramble them a little and add the milk. Now add the asparagus back to the pan. (if you put everything together then the eggs will get scrambled around the asparagus which wont be that pretty). Meanwhile in a different pan cook the rice  with 2:1 proportion ( 2 parts water for 1 part rice).
Add the rice to the asparagus mixture and keep it on the stove for some time . Take it off the heat and now add the chopped tomatoes, coriander and red pepper flakes. Mix and you’re ready to serve.
Other Versions:
You could add parsley, basil or spinach in case you do not prefer coriander. Also you could add a little corn or avocado to give a different texture. And you could even add pine nuts/crushed walnuts for a crunch.
