Hello friends, its almost Friday 🙂 and Mother’s Day is just around the corner. Continuing this week’s mother’s day theme on designforsoul, today we are making a naked carrot cake with cream cheese frosting!!! yum. I know baking a cake for your loved ones is a cliche but common doesn’t it always work? Carrot cake is one of my mom’s favorite’s and although she stays thousands of miles away from me, I plan to show her the cake via skype this year.
The main recipe is a Martha Stewart carrot cake recipe which you could fine here. However, I have added a little tweaks to it. So mainly the changes I made were in the dry ingredients. Using 1 full tsp of nutmeg instead of 1/4tsp and using 2 tsps of cinnamon instead of 1tsp.
Making a naked carrot cake( by that I mean the decorations ) , adding the hearts and roses are among few other tweaks that I made.
The Heart & Roses Decor is made out of marshmallow fondant and food coloring markers. The recipe for the fondant is pretty simple : Packet of marshmallows ( 16 oz), 2 pounds of confectioners sugar, 1tsp of vanilla , 1/4 cup of butter & water. Just microwave the marshmallows for 30 secs add in the ingredients and knead the dough with buttered hands until smooth. Add some food coloring for the colors of your choice.
Since mom is not here , of course ill be happy to fill myself up with her share of the cake. Licking tons of cream cheese while making the cake was an added bonus. I’m so stuffed while writing this post you guys can barely keep my eyes open. Have a great week ahead and show your moms how much you love them. Making something special with your own hands adds to the personal touch and so much better than the store bought stuff I feel. Not that there is anything wrong with that, but combining the two would just be perfect! right?
