Valentine’s day is on a saturday this year guys.. I’m thinking BRUNCH!! Here is a sexy looking delicious easy recipe you can make for your valentine or for your girlfriends. The color of beets is so deep and rich.. hard to replace with any food coloring.. kind of fits the occasion too right? It’s a super easy recipe .. enjoy!
Ingredients: Beets (different colored), arugula, walnuts, goat cheese, soy sauce, honey, rice wine vinegar, olive oil, salt & pepper
Procedure: Boil the beets till they are almost cooked( do not make them squishy ). Peel the skin off. Cut the heads off so that the stand on the pan. Make 2 slices in them horizontally so that each beet in cut the 3 parts.
Filling: Mix the goat cheese, olive oil, salt & pepper into a paste. Apply it in between the slices.
Vinaigrette: Whisk the soy sauce, rice wine vinegar, honey and salt & pepper together.
Lastly assemble and to it with arugula & toasted walnuts.
This recipe is inspired by a salad I tasted in a cafe called ‘Amelie’ in New Orleans.
